Honey-Glazed Carrots
YIELD: 2 to 4 servings
TIME: 40 minutes
INGREDIENTS
- 6 to 8 carrots, peeled
- 2 tablespoons orange juice
- 2 tablespoons honey
- 1 tablespoon butter
- Salt
- 1 tablespoon finely chopped parsley
INSTRUCTIONS
1. Prepare Oven:
- Heat oven to 350 degrees
2. Par-Cook Carrots:
- Fill an ovenproof skillet with 1-2 inches of water
- Bring to boil over high heat
- Add carrots
- Add more water if needed to cover carrots
- Reduce heat to simmer
- Cook until tender but not soft (about 15 minutes)
3. Create Glaze:
- Pour water out of skillet, keeping carrots in place with a spatula
- Add orange juice, honey, and butter to skillet
- Stir to mix (butter may not melt completely)
- Roll carrots in mixture
- Season with salt
4. Finish in Oven:
- Transfer skillet to oven
- Bake, gently rolling carrots once, until glazed (about 15 minutes)
- Season to taste with salt
- Sprinkle with parsley
NOTES
- Choose carrots of similar size for even cooking
- Can add orange zest for extra citrus flavor
- Carrots should be tender-crisp when served
- Can be partially prepared ahead and finished just before serving
